Origin - Taiwan

 

This tea originates from an organic garden that has been in Katie Yen’s family for generations. It is located in the Yuchi Township, Nantou County, in close proximity to beautiful Sun Moon Lake. The rows of tea bushes planted on gentle rolling hills are shaded by bethel nut trees and interspersed by orange trees. This delicate black tea is produced using the Ruby 18 cultivar, a cross between a Taiwan wild tea and a large leafed Assamica from Burma (today’s Myanmar).

 

Profile - The large leaves have been skillfully processed into delicate long dark strips. The dry leaf gives notes of malt and ripe fruit. The beautiful amber liquor is round and silky in the mouth and delivers an amplitude of warm notes of dried raisin, baked apple, and butter cookie balanced by the spiciness of evergreens. The subtle menthol notes provide a long finish.

  • Brewing Guide:

    1 ½ tsp/cup | 3 minutes | 98c/208f.

    This tea is best steeped Gongfu style (in a gaiwan or small teapot):

    Tea: 4g of tea/100ml water.

    Infusions: 1)30s - 2)35s - 3)45s and then keep adding 10s for each further infusion or more to suit your taste.
